Have you ever created something when you really were not planning on it? For those of us in the food industry, and for those who make a lot of coffee (cappuccino in this case) it seems that creating something, even when you are not trying to comes with some ease.
As a chef, I get excited when something drifts into my head, something that when all is said and done tastes great and others, besides me who really enjoy it. My friend Arne @ Caffe Calabria showed me the art of coffee, from roasting (Jesse Fox) to pouring and enjoying the final product while keeping it consistent. One part of the process which still fascinates me is coffee art, or more simply put…making designs in the milk foam.
Sometimes designs go haywire, and sometimes things appear out of nowhere. One morning Brenton Coghlan, our restaurant manager here at West14th Dubai was making a couple of cappuccinos and he handed me mine. Speechless by his finesse in the realm of coffee art I complimented him on his creation. A bit perplexed he said thanks and then asked, “what is it?”.
My response………a platypus.
